The Holy Month of Ramzan Ended this week after the most unexpected and delayed announcement of the Sighting of the Shawwal moon .
Former Chairman of the Moon sighting committe protested and asked his followers to fast an extra fast anytime soon ....what I was wondering is that recently he also called a countrywide strike .....but he did not order his followers to work an extra day or an extra hour for the day lost .
Just a thought .....

My Eid ul Fitr :
Even before the moon controversy ...I had made up my mind not to take a keen interest in the Eid ul Fitr after the Holy Month of Ramzan 1442H because of the Covid-19 Corona Pandemic lockdown .
And on top of it All my dear material uncle died of heart break 💔 just days before the Eid day . My dearly departed Ammi ( May her soul rest in peace in jannah Amen 🙏) had seven Younger brothers , she was the Eldest ...the youngest died first even before her and the grand mother .
This Uncle was somewhere in the middle , three elder and three younger . A retired professor . The only one who tarnished my dearly departed Ammi's ( May her soul rest in peace in jannah Amen 🙏) record by staying unmarried to the best of my knowledge and belief, among the bunch . My dearly departed Ammi ( May her Soul rest in peace in jannah Amen 🙏 ) was definitely not the Match making type ...but they played the team game ....before Farmville and pubg Apps, it was the only game in my naniyal ( grandma's) .
I always suspected something fishy in his not getting married but since the taxman and lawman were relaxed about it all ...I didn't care .
We were poles apart . Never felt any warmth or love in his Eid hugs and handshakes . Eidi use to be collective , never wished me happy birthday . Or baked a cake for me . Thank God the All Mighty Allah Amen 🙏 ,
Because I suspect that his creamy sponge cakes with canned ingredients that was his favorite in baking as a hobby caused the kidney stones and ultimately the kidney failures .
I am definitely not saying that he was unfriendly or rude with everybody . It's just that maybe he believed in the Nuclear family phenomenon and I was excess baggage. Or my untimely birth caused him some kind of Agony 🤪
I do have heard many stories about him before my birth and after when I was very young but this my the Sunday Blog № 267 ( Two Hundred and Sixty Seven) is not a family Blog . Mind it !

Ingredients
• 1-1/2 kg leg of Mutton
• 1 tsp Saffron strands
• 1 tablespoon Milk r piece Ginger
• 6 flakes Garlic
• 2 medium-sized Onions
• 2 tblsps poppy-seeds
• 1/4 dry Coconut
• 1 kg curd (beaten)
• 2 tsps each of Garam masala, Coriander powder and powdered Cumin seeds
• 1 tsp Turmeric powder
• Salt and chili powder to taste
• 100 grams Almonds (blanched and ground)
• 200 grams Ghee (melted)
• 50 grams Mixed nuts (slIced) silver or gold fOil
How To Make Roast Leg Of Mutton
METHOD:
• Soak the saffron in a little hot milk for 5 minutes and then crush to a paste.
• Grind ginger, garlic, onions, poppy seeds and dry coconut to a paste.
• Mix into curd, along with the gararm masala, coriander, cumin, turmeric, salt, chilli powder and almonds.
• Make deep gashes all over the leg and rub the curd mixture into it.
• Set aside for a few hours.
• Place in a roasting pan and pour the ghee on top.
• Bake in a moderate oven for 3 hours or until the mutton is done.
• Remove on to a serving plate, sprinkle the saffron on top and garnish with sliced nuts.
• Top it all with silver or gold foil.
• Serve hot and enjoy spicy mutton leg roast.

My dear friend and mentor ....Doctor Saab believes that the holy month of Ramzan is special than the rest of the year . Agreed !
He further believes that doing good deeds in this month have greater rewards . Agreed !
No he does not stop here . He further believes that dying on the 27th of Ramzan is greater than dying another day . He is very upset that our dear maternal uncle missed the 27th of Ramzan this year by a few hours .
I believe that dying is not good at anytime of the year because with death our real trial , test or examination begins ....first the grave questions , then purgatory then the bridge of sirat and ofcourse the judgement day and beyond .
And we also know that how busy the Gabriel and the Angels are on the 27th of Ramzan . So what if somebody dies on the 27th Ramzan is not tested till a later more convenient time ...?
What would you prefer....Swift and easy or a thousand months later ....?

Pakistani Seekh Kebab + Yogurt Raita
Ingredients
Seekh Kebab
- 1 lb beef chuck 80% lean 20% fat
- 1 onion finely chopped
- 2 tsp ginger and garlic paste
- 1/4 cup mint finely chopped
- 1/4 cup coriander finely chopped
- 2 tbsp butter melted
- 1 green chili grind into paste
- 1 tsp coriander powder
- 3/4 tsp cumin powder
- 3/4 tsp cayenne pepper I add 1 tsp because I like it real spicy
- 1 tsp salt
Raita Chutney
- 1 cup yogurt
- 2 tbsp mint leaves
- 2 tbsp cilantro leaves
- 1 green chilli
- salt to taste
- water add to desired consistency
Instructions
- Preheat your oven to 450 degrees F when you are ready to bake the kebabs.
- Into your beef, add coriander powder, cumin powder, cayenne pepper, salt along with the onion, ginger and garlic paste, mint, coriander and green chilli paste and melted butter. Be sure to squeeze the onions in your hands to drain its juice otherwise there will too much moisture in your beef and they won't stick to the skewer.
- Mix with hand until everything is incorporated but don't overwork it.
- Cover with foil and let marinate in refrigerator for at least an hour and up to six hours.
- While kebab is marinating, make yogurt raita. Grind 2 tbsp each of mint and coriander along with the green chilli in an electric grinder with a touch of water to make a paste.
- Pour this paste into the yogurt.
- Add water to get the desired consistency. If you like the raita more liquidy, add more water. Season with salt and keep aside.
- To make the kebabs, preheat your oven to 450 degrees F.
- Scoop out a big ball of the meat mixture and pierce it through the skewer. Working quickly but gently, spread the meat on the skewer with your hands.
- Press you middle finger in a diagonal angle down the beef skewer to make the signature grooves on the kebab.
- To grill the kebabs in the oven, place the rack in the upper third of the oven in a roating tin that has a grill on it (edit made per viewer suggestions).
- Bake kebabs for 20-25 minutes, rotating as needed to brown the kebabs all around. If you find that your kebabs are getting dry, brush oil as needed. However, I don't think you will need to add oil because unlike the heat from an outdoor grill, the oven keeps the kebabs cooking in its own juices.
- Once cooked, slide of the kebabs onto a plate and serve with raita and pita bread.
- This makes 6 really big kebabs.

Ingredients:
- Whole Chicken 1
- Onion Paste 1 cup
- Fried Onion 1 cup
- Garam Masala Powder 2 tsp
- Nutmeg Powder ½ tsp
- Mace Powder ½ tsp
- Salt ½ tsp
- Ginger Garlic 1 tbsp
- Yogurt 250 gms
- Cardamom Powder ½ tsp
- Ghee ½ cup
- Egg (boiled) for garnishing
- Khewra few drops
- Red Chili 2 tsp
- Turmeric 1 tsp
- Coriander Powder 1 tsp
Method:
- Marinate chicken with, red chili, turmeric, coriander powder, ginger garlic, salt and leave it half an hour.
- Now heat ghee, add onion paste.
- When dries water, add chicken and cook on low flame and cover it.
- After this, add yogurt, nutmeg powder, mace powder, cardamom powder, fried onion, khewra, garam masala powder and mix.
- Then add in murgh and cook for 20 minutes.
- When oil comes the surface and removes from the stove.
- Garnish with boiled eggs and serve.

Okay then it's time to go ...but first the Nihari recipe...
- 2 lb Large chunks of beef/veal - 3 inch pieces
- 1-2 lb bones
- 2 tbsp salt
- 1 ½ tbsp ginger paste
- 1 ½ tbsp garlic paste
- 1 tbsp red chilli powder
- 1 tbsp kashmiri chilli powder
- 1 tbsp coriander powder
- ½ tsp turmeric powder
- Ghee/Oil for cooking
- 1 large onion
- 1.5 tbsp coriander seeds
- 1.5 tbsp saunf
- 1.5 tsp whole black pepper
- 1.5 tsp whole cloves
- ½ tbsp cumin seeds
- 1 bay leaf
- ½ tsp grated nutmeg
- 2 1-inch cinnamon sticks
- 2-3 piece mace
- 3 black cardamoms
- 4-6 green cardamoms
- 1 piece dried ginger (small, can sub with ½ tbsp of gingepowder)
- 6 whole red chillies (round)
- 1 tsp kalonji
- 2 pieces of peepli or 3-4 kabab chini (optional)
- lemon wedges
- sliced green chillies
- julienned ginger
Dry roast all the ingredients in a frying pan (no oil), grind to a powder. Set aside
Heat oil in a large pot
Thinly slice your onion, fry till golden brown then spread on paper towels to dry. (we will use these at the end)
Add all the remaining ingredients in the first list and stir fry the meat until its browned and the masala is cooked - about 4-5 minutes
Then add your Nihari Masala Mix and 7 cups of water and stir well.
Pressure cook for 45-50 minutes or slow cook for 4-5 hours undisturbed to get beautifully tender meat. For slow cooking stove top, bring the mixture to a boil then let it simmer covered.
Once the time is up skim any greyish scum that may rise to the top and discard.
Crush the onions and mix in, bring the nihari to a boil
If you are serving this another time then set it aside for the nihari to cool.
When ready to eat then dissolve ⅓ cup atta in 1 cup water and whisk briskly as you add it to the nihari
The nihari will thicken as it cooks - 10 to 15 minutes
Adjust consistency per liking (more water or atta+water), just remember you need to simmer after adding it to lose the raw taste.
Heat a few tbsp of oil in a small saucepan and add 1.5 tbsp of kashmiri laal mirch (for colour) and add it on top of the nihari like a tadka/baghaar.
Nihari recipes have a few unusual ingredients - mace, nutmeg, dried ginger (soonth) - you can buy these whole or in powder form and it all works well.
Please note the recipe calls for 2 measuring spoons tbsp of salt, if you want to play it safe please start with 1 and then add the other towards the end with the atta/water mix.
While you can use ghee or oil for true flavour I highly recommend ghee most importantly for the tari at the end
Homemade Nihari does not taste like the ubiquitous packet nihari, if you have a hankering for that flavour absolutely add a tbsp of that in your tari. Homemade Nihari also gets exponentially better as it sits!
Nihari gets a lot of it's flavour from the bones, if you want to really extract it to it's maximum then slow cook those overnight in just water and cook your nihari with that water. You can then discard the bones and cook the nihari part with just the meat
